Today it is run by Javier Torrebiarte, the third generation of his family to steward this land. Javier studied agricultural business and technology in the United States and London before returning home to Guatemala to manage daily farm operations, personally overseeing every field task, harvest, and wet mill process that goes into each crop. With 125 full-time employees and up to 500 skilled pickers during harvest, Finca Santo Tomas brings a level of care and precision to every cherry that shows clearly in the cup.
